Who doesn't love burritos?? With this deconstructed burrito, we had a large selection of produce available including beans, bell peppers, mushrooms, okra, tomatoes, and onions. With guacamole and salsa, we had an awesome recipe for a burrito bowl!
This recipe was adapted from https://damndelicious.net/2014/09/10/easy-burrito-bowls/. The recipe is vegetarian, however, there is always room to add any protein of your choice!
INGREDIENTS:
1 cup uncooked rice
1 cup salsa, homemade or store-bought
3 cups chopped Romaine lettuce
1 (15.25-ounce) can whole kernel corn, drained
1 (15-ounce) black beans, drained and rinsed
2 cup Okra, diced
1 cup guacamole
2 tablespoons chopped fresh cilantro leaves
1 cup mushrooms, diced
2 roma tomatoes, diced
1 bell pepper, chopped
1/2 onion, diced
DIRECTIONS:
1. In a large saucepan of 1 1/2 cups water, cook rice according to package instructions; let cool and stir in salsa; set aside.
2. Sauteed okra, mushrooms, tomatoes, bell pepper, and onion together in a pan.
3. Add rice, corn, beans, and sauteed vegetables in bowl and top with guacamole and salsa.
