Easy Banana Bread

This recipe is a bit different, as we made it for a large number of people for Farm-to-Fork. Wanted to share our bulk recipe in case anyone was looking for a dessert or easy bread in a larger capacity!

Ingredients:


To serve 120:

  • Approx. 36 bananas*

  • 12 cups white sugar (3 quarts)

  • 12 eggs

  • 3 cups melted butter

  • 18 cups flour (1 gallon + 2 cups)

  • 12 tsp baking soda (4 tbsp)

  • 12 tsp salt (4 tbsp)


Directions:

  1. Combine (mashed) bananas, eggs, sugar, and butter.

  2. Mix flour and baking soda in a different bowl, then pour flour mixture into the wet mixture.

  3. Stir until just mixed and pour onto greased sheet pans. Top with brown sugar if desired.

  4. Bake at 325 for approx. an hour, checking periodically.

  5. *If bananas are frozen, this adds moisture to the batter. Consider adding a few fewer bananas or adding a bit more flour if the batter seems too wet.
